The “BIG” Veggie Salad

Ingredients

  • 3 cups Mixed Greens (not iceberg, chopped)
  • 1/2 cup Cherry Tomatoes (halved)
  • Carrot (chopped)
  • 1/2 Red Bell Pepper (chopped)
  • 1/4 Avocado (diced)
  • 1 Zucchini (small, chopped)
  • 1 Cucumber (small, peeled and chopped)
  • 1/4 cup broccoli (chopped)

Instructions

  1. In a bowl, toss everything together with 2 tablespoons of any challenge approved dressing. Enjoy! ***IF DETOX DAY: Squeeze the juice of half a lemon over the salad as dressing.
