Kale & Apple Tuna Salad

Ingredients

  • 2 tbsps. Dijon Mustard
  • 1/4 cup Pumpkin Seeds
  • 1 Cucumber (chopped)
  • 1 Apple (diced)
  • 1 Carrot (chopped)
  • 4 cups Kale Leaves (chopped)
  • 2 stalks Celery (diced)
  • 1 can Tuna (drained)
  • Sea Salt & Black Pepper (for seasoning)
  • 1 tablespoon Extra Virgin Olive Oil

Instructions

  1. Whisk mustard, olive oil, and salt and pepper together in large bowl. Then, add all of the other ingredients to the bowl and toss. Season with extra sea salt and pepper if needed. Enjoy!
